Individual removable-base tart tins are 11.5cm in diameter, 2.25cm deep and hold about 180ml. Once lined with dough, the capacity will decrease to around 120ml, depending on the dough’s thickness. If you don’t want to invest in them, you could substitute individual aluminium foil tins, but they’re usually a lot deeper.
If you want to convert one of the large tart recipes to individual tart tins, as a general rule, the dough and filling of the large tart should be enough for 6-8 individual tins.
Small slope-sided tartlet tins are about 6.5cm in diameter and 1.25 cm deep. Too small for one to be an individual dessert, these are best served with tea or coffee in the afternoon or alongside a simple dessert such as a fruit salad.
