Cakes, cookies and other simple sweets can create pleasurable memories of home-baked treats, but nothing connotes home baking better than a juicy homemade pie. All the pies in this chapter are baked in a standard slope-sided Pyrex glass pie dish. For readers outside the United States, this pan fortunately has approximately the same volume as a 25cm round French tart tin with 2.5cm-high sides and it can easily be substituted.
