While the word empanada merely means ‘in bread’, empanadas are a popular casual snack in all Spanish-speaking parts of the world. The term refers to the familiar turnover-shaped pastry in the following recipes but may also be used for a large round or rectangular pie.

Doughs for empanadas can vary: in Mexico and Argentina they often use dough that’s similar to puff pastry. I’ve substituted extra-flaky Sour Cream Dough for that one. For non-flaky empanadas, I like to use the yeasted dough - it always bakes to a tender and moist texture.
