Mortar and pestle sets

A good collection of equipment not only makes cooking tasks easier and faster, but in some cases, you will get radically different results depending on the equipment used, and different results if doing by hand. A classic example is that the amount of liquid needed increases when using a blender rather than a food processor, and the amount of time kneading dough by hand is almost four times as long compared to kneading with a dough hook on a stand mixer. The following list includes the equipment used in the book, and I recommend investing in at least most of these items to build a gourmet kitchen collection. Some recipes offer equipment substitutions when applicable, but results may vary if going outside of the recommended tools.
