A worldwide artisan addiction and the ultimate comfort food; for many, the one crux to their plant-based plate is cheese! Thankfully, our understanding of vegan cheeses has come on leaps and bounds in recent years and long gone are the days of rubbery imitations and substandard shop-bought versions of old classics.
Some people are resistant to using the word ‘cheese’in the context of vegan alternatives to animal-based milk cheeses, but I think it helps us all understand what we are talking about. Calling vegan cheeses ‘fermented nut spreads’ or similar would definitely make them sound unappetizing even to the most happily plant-based of us. Fermented tofu has been used like cheese in Asia for centuries, and there are plenty of other historical examples of similar plant-based products. In modern plant-based cheese production, coconut and nuts are best known for their suitability and versatility in this fermentation process.
