When I was a kid, I treated candy bars like a science-class dissection—with gapped teeth I’d gnaw off the chocolate coating, then the nuts, and finally the caramel, determined to be left with an unadorned slab of irresistible vanilla nougat (my favorite part) to savor on its own. Now that I am a grown-up and simply can’t be bothered with such inefficiency, I’ve developed a recipe for Vanilla Nougat Candy Bar Bites: a hunk of nougat with a bit of chocolate and nuts to balance everything out. A reverse-engineered candy bar, if you will. That recipe has given way to many other candies and confections that bring vanilla to the forefront.
