Burgundy is the region of France that offers the greatest number of appellations, the territory being carved up in a way that is quasi-Lilliputian. It stretches from the south of Paris to the north of Lyon and is divided into five major terroirs: Chablis, Côte de Nuits, Côte de Beaune, Côte Chalonnaise and Mâconnais. Some will say that Beaujolais forms part of this viticultural region, but I prefer to reserve it an identity of its own: vive le Beaujolais libre! Some productions, narrowly defined, are limited to a few acres of vines, two or three arranged on a well-defined soil, masterfully cultivated for a result... Chardonnay and Pinot Noir fight for the wine-makers’ attentions and feed the winelovers’ cellars.
