Cognac, the alcohol of kings, is produced within a circumscribed area in the departments of Charente and Charente-Maritime. It is the result of the double distillation of fermented grape must. Many grape varieties can be used to distil cognac – Ugni Blanc, Folle Blanche, Colombard, Sémillon… Some cognacs are made exclusively from a single grape variety, which is often indicated on the label.
