You can spend thousands of pounds on expensive chocolate-making equipment, but to make chocolates on a domestic scale there are just a few simple pieces of kit that we recommend to home cooks (and I’ve thrown in a few well-loved gadgets for good measure).

Heatproof bowl or bain-marie

Marble slab

Silicone mats

Wire rack

Dipping forks

Electric hand whisk

Thermometers: A pricier digital thermometer is useful for ganaches and tempering, as it’s that little bit more accurate, but a glass probe thermometer is fine for making confectionery. An oven thermometer is a useful tool if you are a keen baker, as thermostats on domestic ovens are notoriously inaccurate.
