I keep three types of pasta on hand at all times: long (spaghetti or linguine), short (penne, fusilli, or orecchiette), and pearl (also known as Turkish couscous).
I like long pasta with sauces, short pasta with chunky ingredients, and pearl pasta for pasta salad or any dish in which you want little pops of texture.
