It seems like the simplest thing in the world to shave some red cabbage into your salad. The original salad-in-a-bag had little flecks of purple along with the cut romaine and iceberg lettuce. It is rarer to see a salad entirely of cabbage. I prize these salads because they are quick, can be dressed ahead of time, are good for parties or feeding a lot of people inexpensively, and they always feel surprising.
