It is no surprise that cucumbers are tasty raw. What can be surprising is how cutting them into different shapes changes their texture and therefore their role in a dish. Consider cutting cucumbers into large planks to make them more of a star. Cut them into half-moons, matching the size of the other ingredients, to put them on equal footing. Slice them paper thin and heap them together as a side dish.
