Chewing on a raw garlic clove or scape can be a bit much for people, because a little goes a long way. In these recipes, the garlic will mellow in the vinegars of the sauce or be spread so thinly (as on toast) that it will add only depth of flavor and not steal the show in an overly aggressive manner.
