Peas take very little time to cook. The first recipe includes making a pan sauce, bringing chicken stock to a boil, and adding the butter in small pieces until it emulsifies, making the sauce thick and glossy. You can also skip this step and simply sauté the peas in fat until they are bright green and cooked through.
