Boiling potatoes is by no mean revolutionary, but the technique is so simple that it can be easily forgotten. Beyond serving as a side, boiled potatoes are a great way to get ahead of meal prep for the week. I like to boil them, smash them with my hands, cool them, and fry them for hash browns or crispy potatoes later on. They also make a fast potato salad or can be added to broth with a handful of greens to make a soup. Sky’s the limit.
I generally boil potatoes whole so that they hold their shape. If the potatoes are very large, you can cut them in advance of boiling, but they will fall apart a touch.
