The pungency of ramps pairs well with grill-induced smoke. Plus, the preparation takes almost no time at all, which is nice when cleaning the damn things can take all afternoon. To showcase ramps at their most perfect and whole, I do nothing more than toss them in olive oil, salt, and pepper and cook on a hot grill. The leaves are nice with a good amount of char on them but will always take a fraction of the time of the bulbs to cook. Place the ramps perpendicular to the grill grates, with the bulbs over the hottest part and the leaves draped over a cooler part of the grill, and you’re more likely to have a tender bulb and charred leaves in the same time frame.
