Putting Together A Mezze Platter

A good platter will have six or more different mezzes served with pita bread or laffa (an Iraqi flatbread). Here are some of the things we would put together:
  • Hummus is always top of our list, either as it is or with tahina. The way I like to present it is with tahina in the centre of the plate and the hummus surrounding it. That way, when you dip your bread, you get both the hummus and tahina along with the paprika, za’atar, pine nuts or whatever else you’ve used as a garnish.
  • Olives and pickles - always olives and pickled vegetables like carrot, beetroot, cauliflower and turnips. (Obviously the best you can get.)
  • Then definitely an aubergine dish of some sort – either pickled or fried, or with tomato, tahina or mayonnaise.
  • A fresh salad, typically an Israeli chopped salad.
  • Marinated or pickled peppers.
  • Moroccan carrot salad.
  • Some kind of tomato salad, like letcho or matboucha.
  • And always chilli sauce of some kind.
