Tahina is one of those ingredients that are always in our cupboard as a pantry staple and usually also on our dinner table. In Israel it’s found everywhere from take-away falafel shops to fine-dining restaurants and it can be used in all kinds of ways. It’s made of sesame seeds ground to a smooth paste and there are different varieties. Some of the darker varieties, for instance, are made with sesame seeds that have been toasted before they are crushed. Israelis argue about which is the best quality but we think it is simply a matter of personal taste.
