Some of these salads were launched at Sababa, some I learned from my mom and some we came up with along the way–we experiment every day. The way a salad comes together in your mouth is so important and a lot of the time, what differentiates a good salad from a bad salad are the proportions of the vegetables. Take the time to shred your cabbage finely or chop your Israeli salad into perfectly uniform pieces, so you have the right ratio of ingredients in every bite.
