I have taken quite a casual approach to the measures of ingredients. When assessing how much rocket it would require to feed 4 people I decided that ‘1 or 2 handfuls’ was far easier and more realistic a quantity than ‘100 grams’ or ‘1 bunch’ (how big a bunch will depend on where you bought it from). Likewise a cup of some ingredients can prove confusing. One cup of olives – if the olives are jumbo black olives from Greece – will give you around 12; a cup of small Arbequina olives from Catalonia will give you almost 30. So I’ve opted for ‘handfuls’ of olives, capers and similar ingredients – and you will have to decide how much you actually want.
