Toasted sesame seeds add a really lovely savoury taste to a salad, as well as a mouth-popping texture. Toasting them can be messy, though, as they pop all over the stovetop. You can do one of two things: either roast them in the oven at 160°C, gas 3, until golden, or toast them in small amounts in a pan with a lid. Shake them over moderate heat and, when most are golden-brown, tip them out to cool.
