Cheese salad has come a long way since my school days. School lunches, eh? OK – so things are getting better, but back in the day, a cheese salad (which was rated the ‘healthy lunch’ option) comprised about a cup of cheap grated Cheddar and some very limp lettuce leaves. It was utterly dire. There is, I reckon, quite a large percentage of the population who believe that cheese makes everything all right – truly it’s the little things that help us get by. Just a little bit of cheese in a bowl of leaves can instantly raise your meal game (of course lots of cheese is invariably better than a little bit of cheese, and I am no advocate of dietary restraint, but you want to titillate your salad rather than kill it). It is also a sneaky but effective way to get recalcitrant offspring to eat salad.
