You may well have wondered why Manchegan cheese comes with such a pretty zigzag design on its crust. There again, perhaps you haven’t. But we shall tell you anyway.
Many many years ago, long before the age of chivalry, the world was darker, harder and hazardous for those of a frail or gentle disposition. In the middle of the middle of Spain, in a region known as La Mancha (the stain), there lived a young maiden, Conchita. She was a will-o-the-wisp of a girl, unassuming to the extent that even her parents barely registered her existence. Her sweet nature did not go unnoticed in the village where she lived, however, and it was not uncommon for her to spend her day running errands for the elderly, the lazy and the downright cunning. She simply could not say no to people.
