Salads can rise or fall on their dressing: sauce brings the rest of a salad’s ingredients together. Simple salad leaves can be rendered quite special just by the addition of suitable seasoning and some pukka oil. And so in this chapter I look at a few basic rules for power dressing. I will also investigate some more unusual (ancient) recipes, and some fun dressings, which weren’t covered in the rest of the book. Mostly it is a question of balance, as Evelyn observes below:
