We believe the best way to experience a new place is through its food. From breakfast at a cozy café to happy-hour bites and appetizers, we love to indulge in the flavors of different cultures. Pinchos is a Basque term that means “thorns” or “spikes,” and refers to small snacks that are skewered with toothpicks. Although pinchos are a category of Spanish tapas, to us, they represent the merriment of togetherness and exploration through bite-size foods for the table. The recipes in this chapter feature a playfully delicious mash-up of coastal cuisines of the South and beyond, served in small bites that will leave your taste buds wanting more.
