Through cooking intuitively and intentionally, you’ll learn to master your tools and equipment over time. We encourage you to experiment with different blends of charcoal and hardwood. We often cook with hickory for its distinctly sweet and tangy Southern barbecue notes, but we keep an assortment of other hardwoods on hand, including alder, apple, cherry, mesquite, peach, and pecan. We think you’ll be pleasantly surprised by how quickly you can get good at cooking with hardwood. By sharing our key principles and techniques, we’ll give you the guidance needed to start perfecting your own style of hardwood cookery.
