One bite of a spicy snack, one sip of chai. Repeat as necessary. Tea-time snacks are a must in most South Asian homes. Indians held on to the practice of afternoon tea long after gaining independence. It has developed into a ceremonial act of love, shared between friends and families. Samosas, pakoras, kachori, biscuits (cookies), buns, rusks and cakes are all welcome at chai time. Entire books could be written on Indian afternoon-tea favourites and, still, there wouldn’t be enough pages to include them all.
