Sardinia has a number of distinctive ingredients that add an authentic flavour to its cooking, and it’s worth seeking them out in order to produce real Sardinian dishes. Many are now available in Australia through delicatessens and specialist provedores; some are also available online, which is particularly helpful for cooks who don’t live close to a major city (see the list of suppliers for more details).
