The choice of potatoes is extremely important. Idaho potatoes will not work because they contain too much moisture and starch and fall apart too easily; keep them for baking. The best potatoes to use for the farcement/farci/farçon family of dishes are:

  • Yellow Finnish potatoes
  • White Rose potatoes
  • Maine Round flat potatoes
  • Long Island potatoes
  • Prince Edward Island potatoes
  • California September new potatoes
They all keep well through February in a cold cellar covered with a blanket.
