I remember well the hunters coming back home during the fall of 1940 with strings of birds, everything from grouse to ptarmigan, pheasant, woodcock, and quail. Since we still have plenty of these birds in the United States we can use them. They need absolutely no marination; even the farm-raised quail have a wonderful flavor. We also have plenty of hare and rabbit. Farm rabbit can be used but will need a bit of marination.
