Épognes are the ancient local Savoie tarts, the crusts of which are made of brioche dough. Use the following ingredients and refer for the method to the Brioche de Saint Genix. Their filling will vary from a plain fruit to a mixture of pastry cream or almond cream and fruit. Feel free to vary the filling to your heart’s content; there is so much variety in the Savoie that anything is possible. Here are the basic recipes and the method for putting the épognes together.
