Many Savoie cities, particularly Annecy, Chambéry, Evian, Aix les Bains, and others dedicated to the tourist trade, have developed their own chocolate specialties. All you have to do is stroll through the streets and look. I bet it will not be long before you enter a specialty shop and come out with one of those lovely little cellophane bags with a lacy edge filled with some insidious and lovely delicacy. Here are a few recipes for Savoie-style chocolates; enjoy them, they are easy to prepare. Since all good shops in the Savoie now use the excellent Valrhona chocolate to prepare their candy, you may want to try finding some for the recipes that follow. I know it is sold in the United States. Any good American chocolate, however, will do very well.
