Shetland Fish Liver Dishes

The livers, which must be perfectly fresh, make a rich and nourishing stuffing. (Cod liver is richest in oil.) In Shetland, where they are much used, a special utensil called a pannabrad (Isl. panna, kettle, and brad, melting) is used for melting fish livers, and the oil obtained is stored for winter use.
