Well, oysters really aren’t something for the fainthearted: slimy, slinky creatures that slither down your throat™ I mean, that’s one way to look at them. But that’s not how our oysters often get described at the Shack.
We are so very lucky to have Joe who owns an oyster farm locally in Ullapool. His oysters get described as plump, creamy, silky and above all delicious. We can take no credit for them at the Shack as all we do is shuck them, which does actually have some skill to it - but not enough to take any credit! Often we hear people say they are the yummiest oysters they’ve eaten and we both think a lot is down to the crystal-clear water they live in; after all they are filter fish.
