The sound and smell of scallops sizzling in a pan with butter really is hard to beat, and with cracked black pepper and a sprinkling of salt they really are mouth-watering. We would always recommend cooking all of the scallop and have never understood why some people remove the orange roe - it is the reproductive organ, and for us it has a delicious and different taste and texture. Scallops can be bought dredged or hand-dived - we always get hand-dived ones as it’s a much kinder way of treating the seabed and everything that lives there. If this is important to you and you would prefer hand-dived scallops, then always ask how your scallops where caught before buying.
