“So, on a typical day, first of all I’d be up in the morning, probably about half past five or something like that, buying the fish at Peterhead. I’ll get it delivered up to Inverness in the afternoon, and I’ll bring it back here to deal with it. It’s literally as fresh as can be, but if I’m buying it locally you’re getting it fresher, you’re getting it directly. The majority of our fish we buy local: our haddock and our cod we buy from the east coast, but the likes of our halibut, hake, turbot, monkfish we buy local here and our prawns and lobsters are local. Our scallops come from Shetland. Our mussels are rope-grown and come from the Western Isles. About 70% of the fish we get comes straight off the boat, and about 30% we buy from the market at Peterhead. We fillet the majority of the fish, myself and my father - we go at it, you know?
