Greens is known for being a sustainable restaurant, probably even one of the first. Even today, sustainability in our ingredients is one of the most important considerations for all of the decisions that we make. Sustainability has become a buzzword in recent years, especially with talks of global warming, rising sea levels, and a whole slew of other issues that are coming about because of humanity’s poor habits. And so, because of this, sustainability has become popularized as something we all know that we should support. However, the message behind the practice is often lost in our modern world, especially when supporting that cause often comes with a higher price tag or more hoops to jump through. To grow a more sustainable world, it’s important that we remember what’s at the root of living sustainably, and that’s building relationships and making a commitment to maintain them.
