Oysters are the most cultivated of all the molluscs. This is done in two different ways, the first being “intertidaly” which allows the oysters to move in and out of the water depending on the tidal movements, filtering the sea-water and extracting nourishment from it. This way, the oysters are exposed to all the natural elements that make them extremely hardy, tough shelled and full of flavour. The second way is “subtidaly” where the oysters are constantly submerged under the water so that they remain unexposed to the elements which results in softer shelled oysters.
