There are many varieties of dory; Silver, Mirror and King but the John Dory or Saint-Pierre, as it is also known, is by far the most superior of its relatives. It is a very recognizable fish with a very large head in comparison with the rest of its thin body. It has a very prominent mouth with retractable jaws used for catching their prey and also has a large thumb-sized dark mark on both sides of its body. The dorsal fin is long and sharp and should be cut off before filleting the fish. Due to the size of the head and bone structure accounting for two thirds of its weight, it makes the John Dory a very expensive fish to use.
