You’ve dried all these herbs. Now what? There’s nothing wrong with storing them in individually labeled containers in your pantry, but why not combine them into classic seasonings you’ll use again and again? Consider improvising and creating your own signature blends—get creative! Here are three of my favorite blends. You can prepare them according to the recipes or use them as inspiration to make your own.

All-Purpose

Mediterranean Herb Mix

1 part dried oregano

1 part dried thyme

1 part dried rosemary

1 part crushed dried sage

1 part hot pepper flakes (optional)

Herbes de Provence

2 parts dried thyme

2 parts dried rosemary

2 parts dried savory

2 parts dried oregano

1 part lavender flowers (optional)

Za’atar Spice Blend

1 part Syrian thyme (Origanum syriacum for authenticity, but you can substitute Greek oregano)

1 part marjoram

1 part sumac

1 part toasted sesame seeds
