I feel that starters are a very important part of a meal because they can really set the mood, so aim to serve small portions of something that tastes delicious and looks tempting.
Both Cruditées with Garlic Mayonnaise and Carrot and Apple Salad with Honey and Vinegar Dressing certainly fit that description and the latter has the added advantages that it only takes a few minutes to make, the ingredients are cheap and you would probably have them in the house anyway. We serve it as a starter but it is also delicious as an accompanying salad with cold meats, particularly ham or pork.
