Knowing how busy most people are, I decided to select for this book a few light and delicious dishes which can be put together quickly, often using recipes given earlier in a new or different way. When you simply don’t feel like a full three-course meal, or don’t have time to cook one, this is the section to turn to. Real fast food! All you need are a few basic ideas—and a few left-overs in your fridge.

Pasta with Bacon and Tomato Fondue and Pasta with Piperonata and Bacon use mainstay recipes from the vegetable section, with the addition of a bit of bacon for extra panache and a sprinkling of grated cheese. Both are delicious and take only as long to make as your pasta takes to boil.
