After the first Simply Delicious programme was shown, a woman stopped me in the street in Cork one day and said: ‘You’re a great girl, do you know you’ve got people into the kitchen who never cooked a thing before in their lives!’ It was one of the nicest compliments I’ve ever got, because more than anything else, I want people to discover how easy and enjoyable it can be to cook delicious food—and what a marvellous difference that makes to everyday life! That, once again, is the aim underlying this book and the RTE television series around which it is based. My approach again this time is to introduce to people several basic and extraordinarily useful techniques. Once these have been mastered, you will immediately have an extensive repertoire of recipes at your fingertips, because each one can be used in an infinite number of ways.
