I feel that starters are a very important part of a meal because they can really set the mood, so aim to serve small portions of something that tastes delicious and looks tempting, such as the Crudités with Garlic Mayonnaise which begin this section.
The Pink Grapefruit Sorbet is tremendously versatile. It makes a deliciously refreshing starter but can also be served before the main course in a meal of several courses; it would then have the effect of cleansing the palate. In other words, you would feel less full and be able to tuck into several more courses quite happily – and have room for pudding as well!
