Onions give off a lot of water as they cook throughout the day, which can throw off the consistency of your dish if you add them raw. In most recipes, and especially the ones that are meant to be more saucy than soupy, I prefer to brown the onions in a skillet, which cooks off some of that water (and also adds some nice browning flavor), before putting them in the slow cooker.
