This is not that old joke about a fly doing the backstroke in your soup. This is about all the wonderful things in the sea and rivers and lakes that can very easily be turned into soups to start and soups that make a meal. By and large, such soups were developed by fishermen and their wives and are thrifty, using bones and a little bit of this and that—not always the finest species—to make savory dishes.

Cooks should feel free to use what is readily available, substituting where need be for the fish and shellfish and cephalopods that inhabit the recipes. One has to be sensible. If one is substituting catfish for carp in Freshwater Fish and Summer Vegetable Soup, for example, it is important to realize that catfish will cook more quickly and should be added later in the recipe.
