Shrimp may be the world’s most popular seafood and throwing a shrimp on the barbie may by now be proverbial; but it is far from the only way to cook shrimp. We have only to think of cocktail parties to get some idea of how much shrimp is consumed. Shrimp can be boiled, steamed, grilled, broiled, roasted, sautéed, and braised in soups and stews. It makes wonderful soups that are quickly cooked (aside from the gumbo). It is versatile and goes well with a wide variety of seasonings. It is happy in dishes from almost every ethnic group, as it is a favorite all over the world and grows or is farmed in both salt and fresh water.
