There seems to be no happier marriage of flavors than seafood and anise. There are lots of ways that an anise flavor is added to soup. It can be added as a primary ingredient like bulb fennel, as a seasoning like anise or fennel seeds, or chopped fronds of herb fennel, or as anise-flavored liquors such as Pastis or Pernod (these are not sweet liqueurs). Raki or ouzo can be substituted.
