Noodles come both dry and fresh. They are made with a great variety of grains. It used to be that all noodles were called “noodles” when they included eggs, and “macaroni” when they were Italian and were destined for tomato sauce. Today, we seem to have jumped the fence in the other direction, using the word pasta for everything, which is pretty silly when we are including Asian rice sticks in our ever-growing larder.
