When I was very young, I read someplace that at a witch trial the evidence for the prosecution was that the “witch” managed to get the filling into the pies. Even when I was about seven or so, this seemed very strange to me, but I am willing to consider the development of filled pastas as magic—white magic. It is interesting that analogous recipes exist in different parts of the world. It may be a matter of trade routes. Comparing ravioli and wontons, wontons and cappelletti, cappelletti and one form of kreplach does make me feel that more than chance is at play here.
